Every spring, Red Barn collects small eggs from the nests of pullets, or young hens. Due to their size (and outstanding flavor!), pullet eggs often only make it to my kitchen! I just love them..
For a short time only, Red Barn is selling these “farmer’s ONLY eggs,” a true springtime treasure.
Because these are among the first eggs ever laid by the young hens, typically less than one year old, they contain the vital essences of the chicken, stored up for her entire life. No subsequent eggs will taste the same.
Our chefs could not be happier:
they say that the pullet variety is the tastiest, truest expression of an egg. What they lack in size is made up for in rich, savory flavor. Like their larger cousins, pullet eggs are perfect for baking, deviling, or simply frying (over easy on asparagus? Yes, please).
Most stores don’t carry pullet eggs, these pullet eggs are truly special, as egg production has become so industrialized and impersonal. At Red Barn, we offer our eggs, pullet and otherwise, only when available
